How to Make Spicy Peanut Noodles
With the limited resources of a makeshift kitchen, plus the time-consuming process of gathering firewood, cooking at a campsite can be a tedious task.
But with the right tools and a repertoire of simple yet satiating recipes, staying well-fuelled for adventures doesn’t have to feel like a challenge.
This five-minute spicy peanut noodle recipe puts together a satisfying meal with a few ingredients that are probably already in your pantry. Combining peanut butter, garlic chili oil and soy sauce, the rich and creamy sauce is the star of the dish, while the crunchy cucumbers bring balance to the spice.
This recipe is easily customizable to your taste and preference, from the type of noodle to the thickness of the sauce. To make it a heartier meal, add ground chicken and/or any vegetables you may have left over, like julienned carrots and sliced red bell peppers. And if you’re feeling fancy, give it a squirt of lime and some chopped peanuts to top it all off.

Ingredients
Sauce
1.5 tbsp creamy peanut butter
1.5 tbsp soy sauce, which can be subbed with low-sodium soy
1 tbsp garlic chili oil
1 tbsp chili flakes, optional for those who like the extra spice
1 tsp sugar, optional to balance the richness with added sweetness
1-3 tbsp noodle water, optional for a more runny sauce
Noodles
One packet of ramen noodles, or one 3-oz. bundle of dry noodles, which can be knife-cut noodles, rice noodles, egg noodles, udon or even spaghetti, depending on what you have on hand.
Garnish
¼ julienned cucumber
Chopped green onions, optional
Instructions
- In a pot of boiling water, cook your choice of noodles according to the package instructions.
- While the noodles are cooking, prepare the sauce in a bowl by mixing soy sauce, peanut butter, garlic chili oil, adding sugar, chili flakes and noodle water according to preference.
- Remove noodles from the water once they’re cooked and transfer them into a bowl. Mix in the sauce until the noodles are well coated.
- Garnish with chopped spring onions and cucumbers.
